The project is a complex initiative SAFEMAT industrial research
and experimentation aimed at the development of innovative industrial processes
to ensure significant improvements in food safety and shelf-life of the products
obtained from the processing of the meat.
The project represents a concrete response to the need of the sector to
diversify the range of products in relation to the evolution of consumer demand
and market operators and to adopt eco-friendly solutions also for what concerns
the packaging used.
The research and experimentation are developed along five strands, which are
closely related:
technological solutions and innovative analytical methods;
ingredientistiche innovative solutions;
innovative solutions in terms of techniques and materials for packaging fresh produce;
development of a new range of products ready to cook (RTC-foods) and sauces meat
development of an innovative system of traceability of products and production processes
